Recipe

Recipe 1:

Raja Mirch Akhuni / Axone 

(Traditional Nagaland Bhut Jolokia and fermented soybean chutney)

Prep time – 10 mins

Ingredients:

Fermented soybean – 1 cup 

Mustard oil – 1 Tbsp 

Chopped ginger – 1 tbsp

Grated garlic – 1 tbsp

Pahari roots’ Bhut Jolokia Chilli Powder with Flakes – ½ tbsp.

Salt to taste.

Method:

Take a wok and heat the mustard oil in the pan

Add the ginger- garlic to fry (Stir quickly to avoid burning)

Add the fermented soya bean

Add salt to taste.

Keep stirring on medium flame till a paste.

Add the Bhut Jolokia powder to the pan and stir (Cover face to avoid spice fumes)

You can add extra red chilli powder at this point for colour ( not too much)

Or add 1 tomato puree to milden the taste.

Stir for 5-6 minutes till well incorporated.

Your spicy bhut jolokia pickle is done!

Serve as a side with hot rice or meat.

Recipe 2:

Bhut Jolokia Chicken Curry

Prep time – 45 mins       

     Ingredients:
  • Chicken thigh fillet (cut into bite-size pieces) – 1kg 
  • Tomato puree – 1/2 cup
  • Pahari Roots Bhut Jolokia chilli powder – ½ tsp
  • Cooking oil – 3 tbsp 
  • Cumin seeds – 1 tsp 
  • Onion, chopped – 1 large 
  • Ginger & garlic paste 1 heaped tbsp 
  • Crushed coriander seeds – 1 tsp 
  • Red chilli powder- 1 tsp 
  • Turmeric powder – 1/2 tsp 
  • Garam masala – 1/2 tsp 
  • Coriander leaves – handfull, chopped
  • salt – to taste
     Method:

     To prepare Ghost Pepper Chicken Curry Recipe:

 

  • Heat the cooking oil in a deep pan
  • Add 1 Tsp of cumin seeds and stir
  • Add the chopped onion, and saute for a few seconds
  • Add ginger-garlic paste and saute until the onions become brown at the edges
  • Add 1 tsp of crushed coriander seeds
  • Add 1 tsp of Red chilli powder and ½ tsp turmeric powder
  • Then add ½ tsp of Bhut Jolokia Chilli Powder
  • Saute for a few seconds 
  • Add chopped coriander leaves and saute for 2 minutes
  • Add the chopped chicken (or meat substitute) and stir
  • Saute for 5 minutes
  • Add the tomato puree and ½ tsp garam masala
  • Mix Well 
  • Cook with lid on a medium flame for 20 mins, stirring occasionally.
  • Add more coriander as garnish.
  • Your Bhut Jolokia Chicken Curry is ready! Serve as a side with steamed rice.
